Chickpea avocado salad

Ingredients:

  • lettuce salad
  • babysitting
  • rukkola
  • tomatoes
  • uborka
  • maize
  • avocado
  • red beans
  • chickpeas
  • feta cheese
  • purple onion
  • red peppers
  • olives
  • salt
  • olive oil
  • lemon juice

How to prepare:

 

  1. Before you plan to make this delicious salad, soak 250-300 g of chickpeas and red beans in a pot of warm water with baking soda for half an hour, then cook for 30 minutes until tender. Taste to see if they are soft enough to eat. Then get a salad bowl of your choice, wash the lettuce, baby spinach, arugula, cut into small pieces if you like, and then add the other ingredients (tomatoes, cucumber, avocado, red onion, feta cheese, red pepper, red beans, olives) cut into small cubes.
  2. In a sealed jar, pour olive oil, squeezed lemon juice, parsley spice mix and shake well.
  3. Season the salad with salt, then pour the dressing on top.
